Graduating in both life and the kitchen

After many nights of pasta, ramen, and canned corn (supplied by mama Tai) in college, I think its time that I upgrade my diet. Here is to growing up and living a healthier life!

Grocery Haul First week of Jan: (restocking post- holiday)
- potatoes ($5 bag)
- Rosemary
- Orange juice
- milk
- Asparagus
-Shake n Bake
- Pita bread
- ground lamb
- salad mix
- yogurt
- lettuce
- Turkey sandwich meat
- pepperjack cheese
 Biweekly Total $50 

After giving my sister recipe ideas, I realized that I hadn't made some of the menu items I suggested in awhile lol. So here's a list of the things I made over the past few week....

Wednesday: Wontons by Mama Tai
Thursday: Lamb Burgers with a side of steamed broccoli
Friday: Shake n Bake Chicken with roasted potatoes and steamed broccoli
Sunday: turkey meatballs with roasted potatoes and lemon roasted asparagus
Monday: Pasta with asparagus

I love reusing leftovers from the night before in a new dish so that I eat everything I cook and try to minimize the waste (something Amy Tai loves as well).

do you make your own meatballs or buy frozen? from where? (I tried the TJ's ones but they're pork I think, turkey is healthier I think)

I think you can pre mix a large batch and just add the wet ingredients each time. I generally just use panko breadcrumbs (at TJ's or asian stores) and coat chicken with the egg/panko mixture. I think it's healthier with less preservatives the the purchased kind.

Yeah I usually get TJ's turkey meatballs (they are huge, two is more than enough per meal)

I was just introduced to shake n bake, so I'll try out the home made version next. I was surprised how well it kept the moisture in the chicken after baking

If you ever get around to making your own meatballs, I'd recommend you kill two birds with one stone and make a batch of burgers to freeze, and meatballs to freeze. on the rare occasion we do this, we end up having loads to freeze left over and that's always good for another quick fix dinner. burgers are more a wkend thing, we only grill them.

I am trying to make the shake and bake chicken but I don't think I am getting it. Just tried to marinate the seasoning for the chicken and the flour coating is all chunky! What am I doing incorrectly? Anyways, I coated some salt + seasoning + a light coat of flour on to the chicken breast for this evening. We shall see how it turns out. I also marinated 2 drum sticks using Asian Teriayki sauce as a backup. Will put it in the oven tonight and see!
