Lunch is probably the hardest meal of the day to plan for. I never know exactly what a day might look like, some days the team will take one hour breaks other days we are trying to squeeze in 15 min to grab a bite. But because, I usually get home early enough to cook my dinners, I'll make something extra for lunch the next day. But I always find that the same meal twice
in a row never tastes quite the same, regardless if its wontons, pasta, or something else.
However, right before the Holidays as I was worried about not being able to finish off my salad mix I found this easy recipe. Not only is it a replacement for the boring turkey sandwich, but great way to get more veggies into my day and something a little different!

hmm...isn't this basically a sandwich using pita bread rather than reg sandwich bread? or a pita pocket?
i go to this burmese joint that has samosa like stuffed pockets with curry chicken in it. delish!
i recommend you find a recipe for curry chicken salad (so easy to make, so good) and then you can stuff a pita pocket with the curry salad mix for lunch the next day. i've made it a few times and it's always well recieved!
oh, another rec:
try cooking something that you can put a twist on for lunch the next day.
for ex-my clam linguine i made last night, the leftovers i took with me to work. BUT if I had finished all the clams, I would have used the leftover noodles (with the basil and garlic) and put some pesto sauce on it (from TJ's cheap and pretty good) on it for a pesto noodles.
since you're a single and it's hard to use up pesto jar in one go (and it grows moldy if you don't ) also freeze the leftover pesto sauce, or use it for pesto spread on another day's sandwich/pita pocket. you could also liquify pesto a bit with some olive oil and use with vinegar for a salad dressing. voila! same recipe, 2 or 3 varieties!
